How are pepernoot cookies made?

Pepernoot cookies (also known as pepernoten or peppernuts) are the most beloved cookies in the Netherlands. Every year, over 7 billion of these tiny treats are enjoyed across the country. Recognised as Europe’s smallest, oldest and most charming chocolate-coated cookie, they’re now ready to win hearts in the UK.

What makes pepernoten so unique is their shape and texture. Baked in our 90-meter-long conveyor belt oven, each cookie is perfectly crisp thanks to a carefully engineered baking curve. Different temperature zones in the oven ensure the pepernoot is crunchy throughout — not too soft, not too hard — delivering that satisfying snap in every bite.

The iconic shape, a round dome with a flat base, has evolved from its humble beginnings as an undefined lump (the old Dutch pepernoot) into a well-loved Dutch cookie. Today, this little cookie is gaining fans all over the world.

A true hallmark of the pepernoot is the signature crack on top. This happens through a natural reaction between ingredients during our special baking curve, something a flat oven just can’t replicate. It gives each cookie its rustic, artisanal look.

After cooling, each pepernoot is quality-checked before heading to the packaging line.

Over time, we’ve expanded our range with chocolate-coated pepernoten, using premium Belgian chocolate. As the chocolate is slowly added in a rotating drum, each cookie receives an even coating. Smooth, glossy, and never sticky.
